There are people who are adamant that there is no such thing as a true convection oven. They argue that the air gusts would be too powerful and would blow out the gas streams. This is simply not true. There are most certainly true gas convection ovens.
Convection means that the oven has fans which blow the hot air, so that the entire oven is the same temperature. This is better than a standard oven which will get hotter in the places closer to the heat source. The convection oven allows heat to be dispersed more evenly.
